Colombian coffees are characterized by their distinctive flavor profile and often exhibit a complex acidity due to the high altitude at which they are grown. With the San Sebastian, we were able to secure a superb single-origin coffee grown by coffee farmers on small plots at an altitude of 1700 meters. is grown above sea level.
We are fans of fruity coffees. Our San Sebastian offers us very complex and wonderful flavor nuances of mandarin, yellow plum, and caramel. It also has a well-balanced acidity that complements its lovely sweetness perfectly.
The processing method used at our San Sebastian is a traditional washing method.
This wonderful coffee is grown by small farmers in the municipality of Inza, which belongs to the Tierradentro region in western Cauca. This region is 80% inhabited by the indigenous Paece people. The average farm size is 0.5 to 1.5 hectares. The farmers own small plots of land where they cultivate coffee, primarily Castillo and Caturra varieties, at an altitude of 1700 meters above sea level.
