We decided to roast it using the omni-roast method. This means it's suitable for all cooking methods.
Regarding the decaffeination process: The Swiss Water Process was developed in Switzerland in the 1930s and has been used for commercial production since the 1980s. It does not require chemical solvents and therefore decaffeinates the beans very gently.
At the beginning, the green coffee beans are soaked in hot water to dissolve the caffeine. But caffeine isn't the only water-soluble component. Sugars and other ingredients that give coffee its distinctive flavor can also be lost during this process.
To prevent this, the water used to soak the beans is passed through an activated carbon filter. Only the caffeine is filtered out, while the sugar and other components pass through and remain in the water – the so-called green coffee extract.
This is then used to soak the next batch of green beans for about 8–10 hours, removing only the caffeine. Finally, the beans are dried and prepared for shipping.
The result is a decaffeinated coffee with a rich flavor and free from added chemical solvents. This smooth, caffeine-free Colombian coffee comes with sweet, fruity, and slightly winey notes.
