Our coffee from Guatemala, sourced from the COIPEC cooperative, is a washed Arabica farmer's blend with Bourbón and Caturra varieties. Imported for us, it is handled by our friends at Quijote Coffee. Their close relationship with the coffee farmers and cooperatives is evident in their regular on-site visits. This direct connection not only ensures quality but also fosters a sustainable and supportive partnership.
It has a soft to medium body, tastes chocolatey and brings beautiful floral notes.
This coffee is processed using a washed method.
D The cooperative COIPEC, also known as APPECE (2001–2018), consists of small-scale coffee farmers in the San Marcos region. Their commitment to the socio-economic development of their communities is reflected in the plantations that stretch along the narrow valley slopes of the tributary and source area of the Río Naranjo, which flows into the Pacific Ocean.
The name "Entre Cerros" refers to this unique geographical location. Due to the high altitude of the plantations, COIPEC produces exclusively Arabica coffee as Strictly Hard Bean (Strictly High Grown / SHG). With an annual rainfall of between 2,500 and 3,000 mm, avocados, pacaya palm hearts, bananas, and jocote plums are also cultivated on the plantations. This diverse cultivation method also reflects the company's commitment to sustainable agriculture and ecological diversity.
